Going Nuts Over Butternut Squash!

So my friends, this is my all time FAVOURITE soup. So easy to make you could probably make it with your eyes closed… ha, but please don’t. I try to use seasonal fruit and veg when I can, so this checks that box and Organic, locally grown & Non-GMO.

I also got fancy and made a batch of homemade Chicken stock and used it in this soup. For so many reasons Organic Chicken Stock or Bone Broth as its also known has many nutritional benefits. I recently discovered how it could help my skin.. every year around this time i get eczema and Bone broth could be my saving grace.. And now for the Amazing Butternut Squash Soup Recipe –

~recipe author: Living In Aloha~

Makes 2-3 large bowls of soup

Ingredients:

  • 1 large Organic Butternut Squash (around 3 cups ) (peeled,cubed)
  • 1/2 Organic Onion (diced)
  • 2-3 Cloves of Garlic
  • Few splashes of Extra Virgin Cold-pressed Olive Oil
  • 1/2 teaspoon of Himalayan Salt
  • Few pinches of Ground Black Pepper
  • Few Sprigs of Rosemary (or any herbs you like/have)
  • 2-3 cups of Organic Chicken Stock (homemade is better for you!)

Method:

  1. Peel and cut up the Butternut squash into 1 inch sized cubes, not forgetting to scrape out the seeds (you can save these for roasting & garnishing)
  2. Dice up the onion, smash & slice up the garlic and place in a 9 x 13 inch baking tray with the butternut squash, olive oil, salt, pepper & rosemary
  3. Bake at 350 degrees F for 35-40 mins/ or until soft
  4. Pop all the ingredients & the Chicken Stock into a blender, i used my Nutri-Bullet as i use it for everything! But you could use a immersion blender if you prefer
  5. Place into bowls, garnish with parsley, a splash of olive oil or parmesan cheese or crumbled goats cheese …anything that takes your fancy & remember to share with Love! EnJOY
